Homemade Roasted Onion Noodles
Recipe for Olga's Original Homemade Roasted Onion Noodles (Dairy Free, Gluten Free, Grain Free, Nut Free, Soy Free, Refined Sugar and Oil Free, Paleo Friendly)Ingredients:1. 2 large sweet onions, such as Sunions, peeled and quartered2. 2 tablespoons light olive oil or melted ghee3. 1/4 teaspoon freshly grated nutmeg4. 1 cup water plus more if needed5. 1 1/2 cups cassava flour6. 1/2 cup kuzu or arrowroot starch7. 2 eggs, lightly beaten8. Kosher sea salt and freshly ground black pepperDirections:1. Preheat the oven to 400° F.2. Place the onions in a small baking dish, drizzle with oil, nutmeg and a small pinch of each salt and pepper; coat well.3. Transfer the dish to the oven and bake until tender and browned, about 50 minutes to 1 hour; toss the onions once or twice during cooking. Remove from the oven and let cool completely.4. Transfer to a blender or food processor, add 3/4 cup of water and pulse until the mixture is smooth and has the consistency of apple sauce, adding more water if needed, one tablespoon at a time.5. In a large bowl, whisk together the flour, starch and a large pinch of salt; make a hole in the center. Put the eggs and 1/2 cup of the onion mixture into the hole; refrigerate or freeze the rest of the mixture to use another time. Using a fork, start mixing the dough slowly until you have a uniform texture and color. The dough should be soft and smooth and it shouldn't stick to your hands. If the dough seems too stiff, soften it with 1-2 tablespoons of olive oil or a little water.6. When the proper texture is achieved, form a ball with the dough, wrap it in plastic and chill for at least 30 minutes or as long as overnight.7. Remove the dough from the fridge and divide into 4 pieces; work with one piece of dough at a time.8. On a well-floured surface, roll out the dough to about 1/8-inch thickness. Using a sharp knife or a pizza cutter, cut the noodles. You can make them as narrow or wide as you like but cut them as evenly as possible to ensure a uniform cooking time. Don't let them sit around for too long. The longer they sit until ready to cook, the more brittle they get. I recommend cooking them immediately.9. Boil the noodles in well-salted water until tender, about 3-5 minutes after they have surfaced. Drain and rinse with cool water. Water may appear cloudy during cooking; this is normal. Do not overcook.10. Serve immediately.Serves 6-8
