Paleo Pie Pastry
Recipe for Olga's Original Paleo Pie Pastry (Dairy Free, Gluten Free, Grain Free, Nut Free, Paleo Friendly)Ingredients:
- 2 1/2 cups cassava flour
- 6 tablespoons cold lard
- 1/2 teaspoon fine pink Himalayan salt
- 1/2 cup apple cider vinegar
- 4-5 teaspoons New Zealand manuka honey blend, such as Taylor Pass Honey Co
- 12 tablespoons cold unsalted butter, cut into small pieces
- 5 tablespoons ice water
- 4 tablespoons ice-cold potato vodka, such as Blue Ice or Chopin
Directions:1. To make the sweetened apple cider vinegar, dissolve 4-5 teaspoons honey in 1/2 cup apple cider vinegar.2. Pulse the flour, lard, salt and 3 teaspoons of the sweetened vinegar (save the rest for another crust or two) in a food processor until the mixture resembles fine meal. Add the butter and pulse until it is in pea-size pieces. Turn the mixture into a bowl. Mix the water and vodka and pour over the flour mixture; mix with a fork until the pastry begins to come together. Pinch it with your fingers; if it doesn't hold together, add up to 2 more tablespoons ice water, 1 tablespoon at a time, and test again. Gently knead the pastry into a ball. Divide it in half and flatten into 2 disks. Wrap each disk tightly in plastic wrap and refrigerate for at least 30 minutes before using or as long as overnight. This pastry freezes well up to 2 months.Makes 1 double or 2 single piecrusts
